About Chef Mark

Mark Filatow has always liked cooking, but what he didn’t realize at a young age was his love for collaboration with talented teams to create remarkable flavours from humble (and not-so-humble) ingredients.

Influenced by his mother and grandparents in the Kitchen, Mark remembers baking cookies before learning to talk. He was exposed to good ingredients at a young age; the family shopped from local farmer’s markets (because of the economic value). His love for cooking grew from family tradition to a life-long pursuit.

Through years of culinary school, apprenticeship and cooking experience at renowned restaurants, including his own Waterfront Wines, Mark continued to recreate the recipe for good food. It starts with quality ingredients, mix in a bunch of creative collaboration, a dash of audacity and a pinch of simplicity.
